Here is a yummy recipe for you to try on these cold winter days! It is called Buffalo chicken soup and is perfect if you are following the Paleo diet. If you like a little kick to your recipes, this one calls for Frank’s red hot sauce!
Ingredients:
- 1 head of cauliflower, chopped
- 4 Organic chicken breasts
- 2 Tbsp Organic chicken stock
- 2 Tbsp Organic raw honey
- 3 stalks of celery
- 1 cup Franks red hot sauce
- 1 onion, diced
- ½ Tbsp dried dill
- ½ cup chopped cilantro
- 1 tsp black pepper
- ½ Tbsp fresh parsley
- ½ Tbsp chives
- 1 Tbsp garlic powder
- ½ Tbsp onion powder
- ½ cup coconut milk
Directions:
- Using a large stock pot, add 8 cups of water, cauliflower and the chicken breast.
- Bring to a boil and reduce heat on the stove.
- Once chicken is cooked, take it out and set it aside.
- Add coconut milk, raw honey, chicken stock, spices, and franks red hot sauce.
- Use a stick blender and puree it.
- Shred the chicken with a fork and add to the pot.
- Chop the celery and onion and add to the pot.
- Stir in the parsley, chives and cilantro and simmer for about 20 minutes.
- Pour it in a serving bowl and enjoy!
